Brown butter.
Melt chocolate.
(While chocolate cooling) Combine sugars & egg, max speed mix em up into a frothy thingy with the trails
After cooling, add cocoa powder + splash (2-3 tbsp) boiling water to chocolate. Just combine (it will go hard)
Add butter, chocolate mix and whisk gently until combined.
Stop and gently stir in sourdough starter and vanilla extract and baking powder.
Mix chocolate chips in by hand… Gently
Pour into tray. Cook 20 mins bottom shelf, 180°C (non-convection)
